Tropical Chicken Pitas

Add a touch of tropical flair to your next meal with these Grain Field Chickens Stuffed Pitas.

You’ll need:

● 2 Grain Field Chicken breasts, grilled and sliced

● 4 whole-wheat pita pockets

● 1 cup pineapple chunks

● 1 cup mango chunks

● 1/2 cup red cabbage, shredded

● 1/2 cup carrots, grated

● 1/2 cucumber, sliced thinly

● 1/4 cup fresh cilantro, chopped

● 1/2 cup plain yogurt

● 1 tbsp honey

● 1 tbsp lime juice

● 1 tsp chili flakes (optional)

● Salt and pepper to taste

Method:

1. Season chicken breasts with salt, pepper, and a pinch of chili flakes.

2. Grill until fully cooked, then slice thinly.

3. In a small bowl, mix yogurt, honey, lime juice, and a sprinkle of chili flakes (if you like a bit of heat).

4. Season with salt and set aside.

5. Warm the pita pockets slightly.

6. Stuff each pita with a mix of red cabbage, carrots, cucumber slices, pineapple, and mango chunks.

7. Add slices of grilled chicken on top.

8. Drizzle the yogurt sauce over the filling and garnish with fresh cilantro.

9. Plate the pitas and serve with extra yogurt sauce on the side for dipping.
