Sweet & Sticky Apricot Chutney Glazed Chicken

Getting the braai going this Easter weekend? You can't go wrong with this Grain Field Chickens Sweet & Sticky Apricot Chutney Glazed Chicken!

You’ll need:

Grain Field Chickens chicken pieces

● 1 cup smooth apricot jam

● 1/2 cup fruit chutney

● 1/4 cup oil

● 2 tbsp vinegar or lemon juice

● 1 tbsp soy sauce (optional)

● 1-2 crushed garlic cloves, salt, and pepper.

Method:

1. In a saucepan, gently heat: apricot jam, fruit chutney, oil, vinegar or lemon juice, soy sauce (optional), crushed garlic cloves, salt, and pepper. Simmer for 5 mins. Let it cool.

2. Pour about 2/3 of the cooled marinade over the GFC pieces. Mix well, cover, and refrigerate for at least 1 hour (longer is better!). Reserve the remaining 1/3 for basting.

3. Braai chicken pieces over medium-hot coals, turning regularly. Start skin-side up. Cook for about 25-40 minutes (depending on size and heat).

4. In the last 10-15 minutes of cooking, start basting frequently with the reserved glaze until the chicken is cooked through, sticky, and nicely caramelized.
