Ingredients:
● 500g Grain Field Chicken (cut into large chunks)
● 1 tbsp olive oil
● 1 lemon (zested and juiced)
● 2 garlic cloves, minced
● 1 tbsp dried oregano
● 1 tsp paprika
● Salt and pepper to taste
● Fresh parsley, chopped (for garnish)
● Wooden skewers (soaked in water for 30 minutes)
Instructions:
1. In a bowl, mix olive oil, lemon zest, lemon juice, minced garlic, oregano, paprika, salt, and pepper.
2. Add the GFC chicken chunks and toss to coat. Let the chicken marinate for at least 30 minutes (or overnight for more flavor).
3. Thread the marinated chicken pieces onto the skewers.
4. Make sure they are tightly packed but not overcrowded.
5. Preheat your grill or stovetop pan to medium-high heat.
6. Grill the chicken espetada for about 5-7 minutes per side, or until the chicken reaches an internal temperature of 75°C and is golden brown.
7. Remove the chicken from the skewers and sprinkle with fresh parsley.
