Ingridients:

  • 800g fresh chicken pieces
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 3 tbsp curry powder (mild or hot)
  • 2 potatoes, cubed
  • 1 can chopped tomatoes (~400g)
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • Fresh coriander (for garnish)
  • 2 tbsp oil (for cooking)

Method:

  1. Heat oil, then toast cumin and mustard seeds until fragrant.
  2. Add onion, garlic, and ginger; sauté until golden.
  3. Stir in curry powder and fry for 2 minutes.
  4. Add chicken and brown well.
  5. Add tomatoes and potatoes, then simmer for 40 minutes until chicken is tender.
  6. Garnish with coriander and serve hot with rice or rotis.
