Chicken & Dumpling Stew Recipe

🍗 Ingredients

For the stew:

  • 6 Grain Field Chickens chicken thighs
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery sticks, sliced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 tsp thyme
  • 4 cups chicken stock
  • Salt and pepper, to taste

For the dumplings:

  • 1 cup Super Sure flour
  • 1 tsp baking powder
  • Pinch of salt
  • ½ cup milk
  • 2 tbsp butter, melted

👩‍🍳 Method

  1. In a large pot, sauté onion, garlic, carrots, and celery until softened.
  2. Add the GFC chicken, herbs, stock, salt, and pepper.
  3. Simmer gently for 45 minutes, until the chicken is tender and the flavours have melded. Remove the bay leaf.
  4. In a bowl, combine the flour, baking powder, salt, milk, and melted butter to form a soft dough.
  5. Drop spoonfuls of the dumpling dough into the simmering stew.
  6. Cover tightly and steam for 15 minutes — don’t lift the lid!
  7. Serve hot and enjoy that home-cooked goodness.
