● 500g Grain Field Chicken Livers, cleaned and trimmed
● 2 tbsp olive oil
● 1 onion, finely chopped
● 2 garlic cloves, minced
● 2 tbsp peri-peri sauce (adjust for spice level)
● 1 tsp smoked paprika
● 1/2 cup heavy cream
● 1/2 cup chicken stock
● Salt and pepper, to taste
● Fresh parsley, chopped (for garnish)
● Crusty bread or toasted baguette slices, for serving
Instructions:
1. Heat olive oil in a skillet over medium heat.
2. Add the chopped onion and cook until softened, about 3-4 minutes.
3. Stir in garlic and smoked paprika, cooking for another minute.
4. Add the chicken livers to the pan and sear until browned on the outside, about 2-3 minutes per side.
5. Stir in the peri-peri sauce and chicken stock. Simmer for 5 minutes.
6. Lower the heat and add the heavy cream. Stir until the sauce is smooth and creamy.
7. Season with salt and pepper to taste.
8. Transfer the chicken livers to a serving dish and garnish with fresh parsley.
9. Serve with warm crusty bread or toasted baguette slices for dipping.
